This recipe is really great for a quick meal if you’re hungry and don’t have a lot of time or you just don’t want to make a big production out of dinner (or if you’re a college kid like me and just need to get rid of the stuff in the fridge). Ingredients:

1 large chicken breast - diced (Vegetarian option: can be substituted with Gardein Chick’n or tofu)
1/2 block of mozzarella cheese - diced
1/2 large onion - sliced
1/2 large tomato - diced
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. chili powder
2 tbsp. olive oil
1 lemon - squeezed
